Ingredients

  • 1 pound (450g) shrimp, peeled and deveined

  • 4 tablespoons butter

  • 4 cloves garlic, minced

  • 1/4 cup white wine (or chicken broth)

  • Juice of 1 lemon

  • Salt and black pepper to taste

  • Chopped parsley (for garnish)

  • Cooked pasta (such as linguine or spaghetti) or crusty bread (for serving)

Preparation

  1. Start by preparing the shrimp. Peel and devein them, leaving the tails intact if desired. Pat them dry with a paper towel and season with salt and pepper.

  2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

  3. Increase the heat to medium-high and add the shrimp to the skillet, arranging them in a single layer. Cook for about 2-3 minutes per side until they turn pink and opaque.

  4. Remove the cooked shrimp from the skillet and set them aside.

  5. Deglaze the skillet with white wine, scraping any browned bits from the bottom of the pan. Let the wine simmer for a minute or two to cook off the alcohol.

  6. Add lemon juice and chicken broth to the skillet. Bring the mixture to a simmer and cook for about 2-3 minutes to reduce slightly and infuse the flavors.

  7. Return the shrimp to the skillet and toss them in the sauce. Cook for an additional minute or two to warm the shrimp back up.

  8. Stir in chopped parsley and, if desired, a pinch of red pepper flakes for a touch of heat.

  9. Serve the Shrimp Scampi over cooked pasta, such as linguine or spaghetti, or with crusty bread to soak up the flavorful sauce.
